Reine Sammut has been a chef since 1975. Her cooking is inspired by hearty Mediterranean classics and by the flavours that her mother-in-law Claudette used to bring back from her travels. Her passion, precision and commitment to French gastronomy won her a Michelin star in 1995. She was awarded with prestigious honours such as the Ordre National du Mérite, Légion d’Honneur, Ordre des Arts et Lettres and Médaille du Mérite Agricole.
Reine has teamed up with her daughter Nadia Sammut, a coeliac sufferer, to promote Cuisine Libre (or “free cuisine”): gluten-free food with great taste, to make gastronomy accessible to all. The idea is simple: to make sure that people of all ages, all social classes and all backgrounds can enjoy a shared culinary experience around the same table.
600,000 people have coeliac disease in France. But food exclusions also affect diabetics, people with food allergies, intolerances or pathologies requiring a specific diet, or they can be related to cultural choices… We are not here to judge your choices – whether those stem from obligation or taste – but to make sure that all can enjoy a shared meal that is full of flavour and free from decisions, worries and allergens!
Auberge la Fenière is the first entirely gluten-free Michelin-starred restaurant in the world. We ensure that our kitchen is free from all traces of gluten, and use a range of ingredients like rice flour, chickpea flour, chestnut flour and other gluten-free cereals and legumes.
