Reine Sammut has been a chef since 1975. After learning the trade from her mother-in-law, she soon rose to the level of France’s greatest chefs.
Her cooking is inspired by hearty Mediterranean classics and by the flavours that her mother-in-law Claudette used to bring back from her travels. Her passion, precision and commitment to French gastronomy won her a Michelin star in 1995. She was also awarded with prestigious honours such as the Ordre National du Mérite, Légion d’Honneur, Ordre des Arts et Lettres and Médaille du Mérite Agricole.
Reine has teamed up with her daughter Nadia Sammut, a coeliac sufferer, to promote Cuisine Libre (or “free cuisine”): gluten-free food with great taste, to make gastronomy accessible to all.
Auberge la Fenière is the first entirely gluten-free Michelin-starred restaurant in the world. We ensure that our kitchen is free from all traces of gluten, and use a range of ingredients like rice flour, chickpea flour, chestnut flour and other gluten-free cereals and ingredients.
